Tasting Notes
The Pinot Gris grapes were handpicked late in autumn from the certified organic Odyssey Marlborough vineyard in the Southern Valleys sub-region.
Pressed then re-soaked to maximise absorption of the botrytis characters, the wine fermented with its own wild yeast to an alcohol of 12% and a residual sugar of 105 g/L. Once the desired balance of sweetness, alcohol and acidity was reached, the wine was cooled to stop further fermentation.
Bottled in late August 2026, it is a single vineyard wine showing the distinct Pinot Gris characters of the Southern Valleys in a late harvest style.
